I have to confess, I can’t get enough of dahlias. My love for making them is possibly bordering on a dahlia sugar flower obsession…not to mention growing them in the garden too! This is only my second year or growing, but from what started out as 5 tubers last year, has grown to around 20 this year! I think things could escalate further….!

One of the new dahlias that I am growing this year is “Waltzing Mathilda”. A vibrant and colourful semi-double dahlia. It also happens to be the subject for my new dahlia sugar flower class! With its relaxed informal shape and twisted petals, hues of peach, bright pink and a hint of crimson stand out against dark foliage, it’s sure to make your cake or flower arrangements pop! And with fewer petals, it’s a budget-friendly sugar flower for your cakes too!

What I love about this dahlia

I wanted a dahlia variety that how the “Wow” factor of a larger showy Cafe au Lait but was more appropriately sized for a cake. Most importantly though, my Dahlia “Waltzing Mathilda” has just 13 petals so you can create a dahlia sugar flower showstopper in a fraction of the time. As a cake maker, budget and time is always the bottom line, and this dahlia, ticks all of the boxes.

What can you expect from the new online dahlia sugar flower class?

As always, the class is presented with step-by-step videos of each stage of the process. You will learn how to make your own flower paste, form the central disc, shape the petals and dust for a realistic finish. I will also show you how to make accompanying foliage to add to your arrangement. As well as the videos, I provide comprehensive step-by-step guides detailing the different steps plus sharing the tools that I use. Dahlias in the garden

I have one dahlia in bloom so far, “Totally Tangerine” which shares the vibrant colours of “Waltzing Mathilda”. The rest of my dahlias are putting on some good growth though so I will share another dahlia post here once the rest are in bloom. I have well and truly caught the gardening bug so expect more updates as I grow more to inspire my future sugar flower work.

A few flowers that I grew last year. Having a vase of freshly picked blooms in the kitchen (all homegrown) brightens my day. They were at their peak in August-October so my challenge now is to grow more cut flowers throughout the seasons. I’ll be planting bulbs this Autumn to give me cut Spring flowers for sure!
