For a recent wedding cake I had to create a number of sugar flowers outside of my usual repertoire. This gerbera daisy was one of them and of course, I filmed the process to create this gerbera daisy sugar flower tutorial for you!
On the whole, I’m not a big gerbera daisy fan. But I really enjoyed the process of figuring out how to make them. By chance I actually had a gerbera cutter set that I bought years ago so I already had all of the tools. So I dug out the cutter set and set about developing the flower!
The Cutters
The set that I have used is by Patchwork Cutters and has lots of cutters as part of it. I didn’t use them all so I have detailed below the ones that you need in order to follow my YouTube tutorial. I created my gerbera daisy in red to fit my wedding cake brief. You could of course experiment with any colour you like though!

Forming the Centre
For the centre of the gerbera daisy, I have used the largest stamp from the Jem daisy centre stamps.

Below are the various cutters I have used to form the centre from the Patchwork Cutters Set. I have used the texturing stamp for the centre. I then used the Size 1 cutter for the first 2 layers and the Size 2 Cutter for the second 2 layers of petals.

Outer Petals & Calyx
Finally for the outer petals and calyx, I used the large petal cutter and calyx cutter as shown below.
